Pascal and Laure Doquet are based in Vertus, at the southern tip of the Cote des Blancs, with parcels located in Grand Cru Le Mesnil sur Oger.
A leisurely half hour’s drive south east from Epernay, across the Cote des Blancs and past the famous Grand Cru villages of Cramant, Avize and Le Mesnil Sur Oger, and you arrive in the little village of Vertus, which commands Premier Cru status in Champagne’s Echelle des Crus.
Tucked away down a side turning, almost directly opposite the imposing façade of the headquarters of Champagne Duval Leroy, is the family home of one of the most respected wine makers in the whole of Champagne.
Pascal has an uncanny resemblance to Gene Wilder, the American comic actor, together with a similar ability to see the funny side of things, but he is just as much at home discussing the latest developments in the world of wine or the state of play with any number of his current experiments, from what kind of cork he should use to how much sulphur he should administer in the making of his cuvees.
Pascal has been a winemaker since 1982, working alongside his father Michel in the early years and then running the family domain of Doquet-Jeanmare himself between 1995 and 2003. He became increasingly focussed on sustainable viticulture and in 2001 stopped using chemical herbicides altogether.
In 2004 he bought the shares of the family business that were held by his sisters and gained the freedom to experiment and research into organic methods.
